Stoofperen

Slow-cooked spiced pears in red wine or syrup, often served as a dessert.

Ingredients:

6-8 firm pears (such as Gieser Wildeman or Conference)

4 cups water

1 cup red wine

1 cup granulated sugar

1 cinnamon stick

2 cloves

1 star anise

Zest of 1 orange

Juice of 1/2 lemon

Whipped cream or ice cream, for serving (optional)

Mint leaves, for garnish (optional)

Directions:

Peel the pears, leaving the stems intact if desired. You can either leave the pears whole or halve them and remove the cores.

In a large pot, combine the water, red wine, sugar, cinnamon stick, cloves, star anise, orange zest, and lemon juice. Bring the mixture to a boil, stirring occasionally to dissolve the sugar.

Add the pears to the pot and reduce the heat to a gentle simmer. Cover the pot and let the pears cook for about 1 to 1 1/2 hours, or until they become tender.

The cooking time may vary depending on the size and ripeness of the pears. Pierce them with a fork to check for doneness.

Once the pears are cooked, carefully remove them from the pot using a slotted spoon and transfer them to a serving dish.

Increase the heat of the syrup remaining in the pot and let it boil for a few minutes to reduce and thicken slightly.

Pour the syrup over the cooked pears, ensuring they are well coated.

Let the pears cool to room temperature in the syrup.

Once cooled, you can serve the Stoofperen as is, or refrigerate them overnight to allow the flavors to further develop.

Serve the Stoofperen at room temperature or slightly chilled. You can accompany them with a dollop of whipped cream or a scoop of vanilla ice cream, if desired. Garnish with fresh mint leaves for an added touch.
